Preparation

  1. Cut the Potato and Carrot. Set aside
  2. Sautee shallot and garlic with oil until fragrant. Put ginger, whole White pepper, Cinammon, Candle nut, 
  3. Nutmeg, Clove, Cardamom, and Anistar, sautee until fragrant.
  4. Heat the water for 3 liter until boil
  5. Put Oxtail meat that has been blanched and cleaned to the boil water
  6. Put stir fry spices to boil water, mix well and cook within ± 2.5 hour until reduce for 1 liter of stock
  7. After 1 hour put the salt, AJI-NO-MOTO®, gula and Masako® Sapi. Mix well
  8. When it almost cooked put the potato and blanch for 10 - 15 minutes. Set aside
  9. Put the carrot and blanch for 4 minute. Set aside

Plating

  1. Put the stock of oxtail soup has been strain to the bowl for 200ml
  2. Serve the Oxtail Soup with slice leek dan fried onion
